Yesterday I was looking in one of my mom's cookbooks and I found this brownie recipe. I baked them and they were absolutely amazing! They don't take long to make and they taste delicious! Hope you enjoy...
Ingredients
225g crunchy peanut butter
225g dark chocolate broken into squares
150g light muscovado sugar
3 large free range eggs
1 tsp vanilla extract
4 tbsp almond or normal milk
100g plain flour
1 tsp baking powder
Method
1. Preheat the oven to 180oC and line a square baking tin with parchment paper.
2. Place the peanut butter and broken up chocolate( if you want to make the brownies a bit sweeter use milk chocolate instead of dark) in a heatproof bowl or a bain marie set over a pan of barely simmering water, making sure the bottom of the bowl doesn't touch the water. Stir constantly until melted and smooth.
3. With a hand-held or electric mixer, whisk the sugar and eggs together for 2-3 minutes, until pale and fluffy. Slowly pour the melted chocolate and peanut butter, then add the vanilla extract and milk and continue to whisk until thickened.
4. Sift the flour and baking powder into a separate bowl and then gently fold it into the egg and chocolate mixture. Using a spatula, turn the mixture into the prepared tin and bake in the oven for 15-20 minutes, or until the top is firm and the brownie has come away slightly from the sides of the tin.
5. When the brownie is cooked leave it to cool and cut it into slices. Then sit back, relax and enjoy!
